No Chicken Risotto Recipe

This actually somewhat tastes like chicken.

Ingredients:
Olive Oil
1/4 cup chopped onion
1 tsp minced garlic
1 cup water (or light vegetable broth, not too strong)
1/2 cup of risotto rice (also called Arborio Rice)

Seasonings:
1 tsp lemon juice (I actually used a lemon-ginger marinade)
Salt and Pepper(to taste)
2 TBS of white wine (optional)

1) Put some olive oil in a pot. Saute the onion and garlic for 3 minutes.
2) Put the lemon juice and wine into the water. This ensures that it will be distributed evenly.
3) Add the rice and one fifth of the water solution. When the water is mostly absorbed by the rice, add another 5th. Continue. By the end of the water, the risotto should look pearly and "creamy". If not, you can add a little bit more.
4) Add 1 tsp of olive oil to the rice. Add salt, pepper, and extra lemon juice to taste. If its not "creamy" enough, you can add some more oil.
5) Put on a plate and enjoy! Makes 1-2 servings

The end result should somewhat taste like chicken (the lemon and pepper), without the torture.
During the water-adding is the best time to add additional seasonings, so you can add more lemon juice and wine to the water mixture if you would like.

I've just discovered your blog with pleasure. I'm new in the "bloggosphere" and I'm happy to find other vegan blogs all over the world (even the most of them are in the US). I like yours as you talk about food + your life as a vegan. It's interesting to learn how it is in other places.
Thank you for this recipe. My boyfriend isn't vegan and food is quite a sensible subject between us. I enjoy finding recipes "which taste like but don't contain...".
